Wildtype cultivated salmon debuts at a US restaurant

Wildtype's cultivated salmon went on the menu at chef Gregory Gourdet's restaurant Kann in Portland, Oregon, its first restaurant partner. Weekly service began in June and expanded to daily service in July, following the company's completed FDA safety consultation.

  • Kann is an award-winning Haitian restaurant; Chef Gourdet noted the salmon "hits the elevated and sustainable marks we want our menu to offer."
  • Wildtype's salmon is paired with pickled strawberry, spiced tomato, strawberry juice and an epis rice cracker—a refined preparation.
  • June launch followed May 28 FDA clearance; rapid restaurant deployment suggests pre-existing supply and partnership agreements.
