Physics limits
- Beans are mostly not proteinMung beans are only about a quarter protein, and separating it out takes water, energy and yield losses. That makes the purified protein costlier per kilo than the beans suggest.
- Egg proteins do many jobs at onceEggs foam, bind, emulsify and set, thanks to many different proteins and yolk fats. One plant protein can mimic some of these but not all, so matching eggs in baking and frying is hard.

Mung beans are milled and their protein separated out; the protein is the part that behaves most like egg white.
Set
It firms up when heated
Like egg proteins, the mung bean protein unfolds and links together when cooked, turning a liquid into a soft scramble.
Formulate
Oil and flavour for the yolk
Oils, colour and flavourings stand in for the fat and taste of yolk, which beans don't provide on their own.
