Wildtype's lab-grown coho salmon is due to go on the menu at barmini, the Washington, DC outpost of chef José Andrés, from June 3, 2026. It would be the product's first service in the capital, and it adds to a restaurant footprint built since the June 2025 launch.

## Key facts

- Barmini will begin serving cultivated salmon at its DC outpost starting June 3, 2026.
- The product has appeared in restaurants in seven states since its June 2025 launch.
- Two of the restaurants listed in the coverage (Hai Sí and Otoko) are no longer serving it, so the current count is lower.
- Barmini would be the salmon's first restaurant in Washington, DC.
