Stage: Proto (2 of 5: Research → Proto → Pilot → Deploy → Scaling)
Updated: last update 2026-01-15, facts checked 2026-10-11
Goal: Give precision-fermentation startups somewhere to produce at commercial scale. Lack of large food-grade fermentation capacity is a main bottleneck for animal-free dairy and egg proteins reaching shops.
Status: Late-stage construction; production expected in 2026, two years later than first planned.
Next milestone: Commercial production begins, target 2026 (slipped 15 months; originally Q4 2024)

## Current obstacles

- **Start-up delays**: Production was due at end-2024; the plant was still in late-stage construction in January 2026.
- **Filling the plant**: Over half the capacity is contracted or in late talks; the rest still needs customers.

## Physics limits

- **Cost scales with steel and sterility**: Every tank must stay free of stray microbes for days at a time. Large sterile vessels are expensive, which keeps fermented proteins pricier than farm commodities at today's yields.
- **Each product needs its own purification**: Different proteins separate differently, so switching a contract plant between customers takes re-engineering and cleaning, cutting the time the tanks actually produce.

## How it works

### Microbes: Customers bring the strain

Each client supplies a microbe engineered to make its protein, such as a milk whey protein.

### Ferment: Big sugar-fed tanks

Microbes grow in large tanks on sugar; Indiana was chosen partly for access to sugar, shipping routes and workers.

### Purify: Dedicated downstream line

A purification line separates the target protein from the broth and turns it into a sellable ingredient.
